Cozy Holiday Gingerbread Cake

On a cold and snowy winter night, there's nothing better than curling up by the fire with a blanket and loved ones while enjoying your favorite holiday gingerbread treat with a hot cup of tea. I created this Cozy Holiday Gingerbread Cake not too long ago and it has quikly become a favorite amung family and friends. Enjoy!





Ingredients:

3 cups sifted all purpose flour
1 cup packed brown sugar
4 tsp baking powder
1 tsp salt
2 tsp ground ginger
2 tsp cinnamon
3/4 tsp ground cloves
1/2 tsp finely ground plack pepper
1 beaten egg
1 1/4 cups milk
2 tbsp salad oil
1/4 cup black strap molasses
handful of crystaized ginger
icing sugar and milk for royal icing

Method:

Sift together dry ingredients. Combine egg, milk, salad oil and molasses; add to dry ingredients, stirring until just mixed (do not over mix). Stir in about 4 or 5 finely chopped crystalized ginger pieces. Turn into greased 9x5x3-inch loaf pan. Bake at 350 about 1hr to 1hr 15mins, or until toothpick comes out clean. Cool on rack.

Once cooled, remove from pan and place back on drying rack with waxed paper or tin foil under the rack. Mix together your icing sugar and milk to create a runny icing. Drizzle over loaf 1 to 3 times (depending on personal taste). Decorate the top with sliced crystalized ginger by pressing it into the icing. If desired, drizzled a bit more icing on top to hold ginger in place.

Voila! This cake goes mavelously with a cup of chai tea or a scoop of vanilla ice cream.
